The meat from the sandwiches is soaked before baking in a variety of different alcohols including grappa, gin and scotch. According to chef Steven Hubbell, using alcohol to flavor sandwich meat is an old Italian, specifically Milanese, tradition.
“It’s an old family recipe and we’ve been experimenting,” he said in a phone interview. “We cook the alcohol off and what we’re left with is the true flavor of the drink.”
Although articles have mistakenly reported that the sandwiches have potent alcohol content, Hubbell assured that the paninis will never give your head a whirl.
“They are not even on a separate menu from our regular paninis,” he said.
But the sandwiches are ordered frequently because of the intense fusion of flavor that comes from the clear taste of alcohol, despite it’s impotency.
Hubbell’s personal favorite is the Mortadella which includes Cave-Aged Salva Cremasco cheese, Gherkins, Watercress and Moscato Di Nonino Grappa-saturated salame. And it’s just $11.
